Tiramisu
Try this dessert at home. You won’t regret. Everyone at your home will love and it is easy to prepare.
If you follow my recipe by book, what you get will be a near perfect dish. Of course I take my recipes from periodicals. I try it at home and make my adjustments to make them just perfect.

Ingredients
Sponge finger biscuit – 250g packet
Instant espresso coffee powder – 1/3 cup
Coffee flavored liqueur – ½ cup
Ricotta – 500g tub
Packet cream cheese softened – 250 gram
Icing sugar mix – ½ cup
Cocoa powder – 2tbsp
Arrange half the biscuits in one layer in a 20cm square baking dish. Dissolve coffee in 1 cup boiling water, add liqueur, Drizzle half the liquid evenly over biscuits. Let stand for 5 minutes
Meanwhile process cheeses with sugar in a food processor until smooth. Spread half the cheese over soaked biscuits. Repeat layers. Dust top with cocoa. Cover with plastic food wrap. Chill for at least 4 hours before cutting
This is best made the day before to ensure the biscuits are well soaked. Garnish Servings with fresh berries or cherries. Preparation time is 15 minutes but needs around 4 hours to chill.

Kesar Badam Kheer

Ingredients for Kesar Badam Semiya Kheer:
1/2 cup of semiya/Vermicelli
4tbsp ghee / melted butter
1 litre of milk( whole milk would taste great )
Cashewnuts( as much as you want )
Almonds( 10-15)
Small golden raisins( kishmish )
Saffron strands ( kumkuma puvvu )
Sugar to taste
How to make Vermicelli Kesar Badam Kheer
First heat ghee in a thick bottomed kadai( sauce pan ), add cashew nuts, semiya and raisins one by one.
Let them roast and once the semiya/vermicelli become golden brown, reduce the heat and add half of the milk and thinly chopped almonds. Keep stirring until milk starts to get together, now you can add milk if you want the kheer to be thin.
Cook until the semiya/vermicelli is cooked. If you try to cut the vermicelli with finger it should fall apart right away, at this point add sugar. Cook until the sugar dissolves and finish off with saffron strands soaked in milk.

Fruit Custard with Chocolate

Ingredients
Milk – 1 litre (I used 2%Milk)
White chocolate chips – 1 cup
Custard powder – 4 tbsp
Sugar – 6 heaped tbsp
Various types of fruits cut in small size in a big bowl to cover with custard. I used 2 ripe plantains,2 apples,2 cup grapes,8 oz can pineapple chunks.
Mix 1/2 cup of milk with custard powder and set aside. Bring the remaining milk to boil with sugar. Add the chocolate chips and stir till it melts. Remove from heat and add custard powder(mixed with milk) and cook again for 2 to 3 minutes, stirring continuously to avoid burning. Then pour the hot custard mixture to the bowl filled with fruits and let it cool in the fridge. Delicious custard is ready. If you need,garnish with grated dark chocolate and grapes
