French Toast

French toast is the evening snack I usually make for my son. Usually on Fridays, because I reach home after work only fifteen minutes before him. So not much time left for me to make any other snack. French toasts can be made in 15 minutes and they are tasty. My son loves them.

INGREDIENTS

 

Milk 1 cup

Eggs 4 Nos. beat it in a bowl

Vanilla essence 1tablespoon

Thick slices of bread -10

Butter 4 Tablespoons

Sugar 1.5 Tablespoons

 

 

METHOD

 

Mix egg, Milk sugar and Vanilla essence in a bowl. Heat a large frying pan and heat put some butter to melt . If you don’t have butter in stock you may use vegetable oil sparingly . Soak the bread slices in the mix and fry until golden brown, then drain on a paper towel.

Chapatti

Chapatti is something every Indian woman knows how to make. There are no secret recipes for making Chapatti’s still I thought this should be the first one I post in any recipe blog. There is a story behind it.  The first time I made Chapatti was after my marriage at the age of 27.  Precisely the third day I reached Melbourne from Madras. My Hubby invited some of his friends on a working day evening. On a short notice, I had to make Chapatis for them. Believe me; I never had any idea how to make them. Still I could complete the task in time, Even though each and every Chapati looked like the map of different countries starting from India to Russia. Luckily none of the visitors had or seen a Chapati before. Not to mention, they praised me for making each distinctively different from the other. The moral of the story is whatever may be the mistake you make, it is okay as long as you are at the right (or wrong) place.

 

Here is the Chapatti recipe for people like me, the first timers.

 

 

Ingredients

Whole wheat flour sifted – 2.5 cups

Salt – ½ teaspoon

Oil – 1.5 tablespoons

Water – 1 cup

 

Method

 

Either, you can combine flour and salt or you can add salt in the water. Make a well at the centre of the flour and gradually add water and oil, mix with your hands to make soft dough. Grease the palms of your hand and knead well. It is a good idea to leave it closed in the bowl for half an hour if you have plenty of time. After that divide the dough, into equal parts. With 350 gram flour you will be able to make around 7 average sized Chapattis  Shape each portion into a ball . Then use a rolling pin roll it out to disc shape.  Chapatti should not be too thick. After you make a couple you will get a feeling of how thick a Chapatti should be.

 

Heat a skillet on medium heat. Place a Chapatti on the skillet. When you notice light brown spots appearing turn it to the other side and   lightly press it with a towel of spatula. Brushing with little oil and ghee will make it delicious and soft .Once it is cooked remove and keep it on paper towels. Chapatti is good to eat when it is warm. If you are eating it later, microwave it for 10 seconds or so.  If you microwave it for longer time, Chapatti will become harder. Serve with Curry.
