Ingredients

 

Uncooked medium blue swimmer crabs -4

Peanut oil – 1 Tsp

Small brown onion chopped finely – - 1

Cayenne pepper – ½ tsp

Can crushed tomatoes – 400g

Soy sauce – 1tbsp

Brown sugar – 2tbsp

Garlic – 2 cloves crushed

3cm piece fresh ginger grated

Red chilli – sliced thinly – 1

Corn flour – 1tsp

Water – ½ cup

 

 

Method

 

 

Remove and discard back shells and gills of crab. Rinse under cold water. Chop crab body into quarters leaving claws intact.

 

Heat oil in a wok stir fry onion until softened. Add pepper, un drained tomatoes, sauce , sugar , garlic, ginger and chilli; bring to a boil then

reduce heat. Add crabs simmer 15 minutes.

 

Add blended corn flour and the water to the wok. Stir until tomato mixture boils and thickens .
