Chocolate Museli Muffins
Makes 12
Ingredients
Self raising flour – 1.5 cups
Un toasted muesli – 1 cup
Packed soft brown sugar –1 cup
Cocoa – 2/3 cup
Bicarb . Soda – ½ tsp
Large eggs – 2
Oil (Canola or Olive ) – 1/3 cup
Butter milk - 1 cup
Vanilla Extract – 1tsp
Method
Pre heat oven to 190 degree Celsius fan forced. Lightly grease a ½ a cup muffin pan ; line with paper baking cups.
Place flour, muesli, sugar, cocoa, soda and ½ teaspoon salt in a large bowl; mix thoroughly to combine.
In a medium bowl, whisk together eggs and oil until combined. Whisk in milk and vanilla. Pour
liquid into dry ingredients; stir just to combine (do not over mix)
Divide mixture between cups. Bake for 18 – 20 minutes until firm. Serve warm
